It was my first time patronizing The Sushi Bar. It is a small unit with about 15 - 25 seats - during meal time, I am pretty sure that you have to queue to dine in. The Sushi Bar serves a number of creative, unique and fusion dishes, which will probably "WOW" you. I strongly recommend you to give it a try.
Hot Green Tea
Chawanmushi has always been in my order list whenever I dine at any Japanese restaurant. The unique Chawanmushi served at The Sushi Bar is probably one of the best Chawanmushi that I have tasted thus far. In fact, it is very well prepared (smooth and delicate, without visible bubbles in it) and tastes better than the Chawanmushi served in the major Japanese restaurants in Singapore. It contains Shimeji mushroom, fish roe and crab meat. However, it does not contain chicken chunks, ginkgo nuts and "shark fins" strips; a little different from the usual Chawanmushi that I have tasted.
This Scallop Mentaiyaki is their signature appetizer. Personally, I think it is a very unique appetizer worth trying. The scallops are sliced thinly with mentaiyaki sauce spreaded on top. The scallops and mentaiyaki sauce are slightly 'grilled' and this creates a subtle burnt aroma. It mixes well with the fish roe and chopped spring unions.
This is the Sake & Tako Sashimi. I love the Sake Sashimi very much. It is the best salmon sashimi that I have ever tasted - it has a subtle crispy biting sensation with the salmon sashimi aroma; unlike the usual salmon sashimi that I have eaten at hotels and Japanese restaurants that are soft and soggy.
This unique Soft Shell Crab Aburi Roll is a must-order dish. It is served with soft shell crab chunks, wrapped with shari and sliced half-baked salmon and mentaiyaki sauce. This creates a soft-at-the-outside-crispy-at-the-inside chewing sensation with a very nice aroma when munching.
